when a coworker told me that i could make delicious pulled pork with just a tenderloin, crockpot, can of root beer, and my favorite sauce . . . i just didn’t believe him. then i made it. now i tend to keep a few bottles of root beer stashed away – just in case tuesday will be busier than planned.
Prep Time: 2 min | Cook Time: 7-8 hrs | Serves: 8
- 1, 2lb pork tenderloin
- 1 regular sized can or bottle of root beer
- 1 bottle of your favorite bbq sauce
Poke a few holes in the tenderloin then place in the slow cooker or crock pot. Pour root beer over the meat.Cover and cook on low until the pork shreds easily – about 6 to 7 hours. Drain, reserving about 0.5 cups of the drippings.
Shred pork, add your favorite sauce (thin with drippings as needed for extra flavor), return to the crock pot and simmer for an additional 30min – 1 hr.
Serve with hamburger buns and your favorite BBQ toppings.
While I’ve never had any issue using tenderloin (and prefer using a leaner meat for this), others like using a cheaper, fattier cut like pork shoulder or boston butt.
