adapted from Runner’s World magazine. these little guys are great grab-n-go treats for the week. they’re pretty dense, so light-n-fluffy lovers beware!
Prep Time: 10 min | Bake Time: 20 min | Yields: 12 bites
- 2 large eggs
- 1 1/4 c milk
- 3/4 c unsweetened applesauce
- 2 tsp vanilla extract
- 3 tbspn honey
- 3 c quick cooking oats
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- pinch of salt
- 2/3 c dried cranberries
- 1/2 chopped pecans
Preheat oven to 350 F.
Mix eggs, milk, applesauce, vanilla, and honey in a bowl.
Stir in oats, baking soda, cinnamon and salt.
Fold in cranberries and pecans.
Spoon mixture into a nonstick or greased muffin tin.
Bake for 20 minutes.
The original recipe called for the addition of 1 1/2 tbspn of instant coffee for more of breakfast/coffee bite.
